Sweet-tart rhubarb is mellowed and complemented by apples, while tangy candied ginger kicks the flavor up a notch. The cobbler topping is a nice change from the usual rhubarb pie. This is a great way to welcome spring.
Filling
2 apples of your choice, peeled, quartered, and cored
3 cups sliced rhubarb, sliced about 1⁄2 inch thick
1⁄2 cup sugar
2 tablespoons chopped candied ginger (also called crystallized ginger)
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon salt
